Mud Pie Cookies...

Mud Pie Cookies




My husband and I wanted something sweet today ... so I decided to bake cookies.


I am trying to watch my weight with the wedding coming up and this recipe makes just 24 cookies (unlike some recipes that make 4 or 5 dozen cookies) so I decided to give it a try. I figured if I had 12 cookies and my husband had 12 cookies we couldn't gain much weight! LOL


They are called Mud Pie Cookies.
I remember making mud pies when I was a little girl a long time ago with my sister. Isn't it funny how a recipe can bring back so many memories. Believe me these don't taste like mud :)


Mud Pie Cookies

1/2 cup butter, softened


1/2 cup packed brown sugar


1/4 cup granulated sugar


1 egg


1/2 teaspoon vanilla


1/2 cup self-rising flour


1/4 cup unsweetened cocoa powder


1-1/2 cup rolled oats


1/2 cup chopped pecans

Preheat oven to 350 degrees. In a large bowl beat together butter and sugars until creamy. Beat in egg and vanilla. In a medium bowl, combine flour and cocoa. Add to butter mixture and mix well. Stir in oats and pecans.

Drop by rounded tablespoons onto an ungreased cookie sheet. Bake 10 to 12 minutes. Cool 1 minute on cookie sheet before transfering to wire rack. Makes 24 cookies.
If you like chocolate and you need something quick these are very easy.

The Blind Side * may have spoliers*

Last night my wonderful hubby brough home the movie 'The Blind Side'  with Sandra Bullock ( yes, yes, I know that it isn't "out" yet but we have a couple of 'hook ups' ) .
It is a very touching story . What made the story all that better.. in my opinoin is that it is based on a true story, - a current true story. The acting was great. The movie made us both laugh and laugh and it brought me to tears more then once. It also got me thinking....
Even though I SAY that I don't see color, race, or creed...  but .... do I?...
and what did you or even I get from the movie....?
What did you walk away from the movie thinking...?
 Here she is a wonderful wealthy White mother who seems to have it all but yet is willing to stand up and fight for a poor Black boy.....
(I honestly don't think that family's of one color taking in children of another color is really all that 'unheard of'  or uncommon... it happen all the time and those children are loved and cared for just like the other children of the household)
 or did you walk away from the movie thinking WOW... what a great football story....?
I walked away thinking.... what a great story of a loving family who was blessed enough to be able to open their home to a poor kid who had nothing, no one was willing to really fight for, but saw through it all.... just saw the kid for just what he was.... a kid. Would you do the same thing if placed in her shoes? Would you turn the car around and pick him/ her up and make sure that they were taken care of regardless what your friends or maybe other family members were saying about it?
I would like to think I would. I would like to think that regardless of what others were saying or evern doing that I would always turn the car around and pick up that child.  I plan on looking up and reading in to the 'real- true life' story of this family but for now I would love to hear what you all think of it....

New friends & New Layouts...

So most by now know that I am a very addicted scrapbooker... and I have been lucky enough to find some new friends that ( in time) will be as addicted as me to scrapbooking- they are still in the ' I really like this' stage of things and not quite yet to the 'I may cry if I don't get to scrapbook today' stage of things ...
Which by the way I think I passed some time last year... but that is another post for another day... he he
But due to these new wonderful friends I have made I have gotten some layouts done due to a couple of cropping sessions we have had together so I thought I might share my 'Rock Star' layout with you....
** there is one mat that does not yet have a photo on it, this is due to the fact I have been lazy and not printed out the picture in the correct size yet**

one of these days.... * picture heavy and kinda long*



There is a home on my mind....
It's no secert that Mike and I want to build a house for our family, not just want but Will on lots of land where it's green, there is lots of fresh air, and it's just plain flat out PRETTY....
We have been looking at home plans and drawing on napkins, kids menus, and anything else we could get our hand on for what seems like forever, or at least as long as we have been together. I sit and spend hours durning the day/night looking at homes for sale on line, the areas that they are in, so on and so forth. I want to know that is the 'norm' for homes built, what people have custom made, made bigger, not built at all... everything. I am very thankful that my husband is such an awesome artist, he draws up our dream house every time we are sitting at a table some where waiting on our food to come.
Lately, I have been surfing the web gathering pictures of things that I want in our home. Colors and styles, bedrooms and bathrooms, kitchens and porches.
So I thought that I would share some of them.

Here are some of the kitchen styles that I like- we want LOTS and LOTS of storage ( the more the better!!) ** please note that all of these photos were found on different websites and do not belong to me, they are intended for viewing only**

There are things for each of these kitchens I like, although if I had to pick just one to pluck and have right from the picture it would have to be picture #....
oh Heck I can't choose! he he

here is an office that I just LOVE, - the wall color would have to change a bit - it's open enough to not feel crowded but it also has a very warm and cozy feeling to it. I love all the white, it gives it a very bright cheery look.

I love this library it just makes you want to sit down, curl up, and read a good book...or maybe write one...


This entry way doesn't really fit into the style of home that we want to build but I love it none the less, it's just amazing.
I love the windows and floors in this dining room doesn't it just make you want to have a dinner party fit enough for the Queen?

I love the wood floors... a MUST for our house!


Shouldn't every girl have a grand stair case to walk down in her prom dress or wedding gown?

I get all giddy thinking about my kids running though the grass and the dogs running around with them as I sit on my porch sipping some sweet tea from a rocker watching them....
Or watching the rain pour down as I sit inside next to the fire place listening to the flames crackle.....

*Sigh* I can hardly wait  until the day comes that we move our first box into the home... the home that our children will spend the rest of their childhood years in and the home that Mike and I will grow old in together....

Just an update until a little later.....

Well, I know it's been a bit since I last posted, so I thought I would give a quick update...
besides I have some big news!!!!   .....


I met someone! ....


yeah, yeah    I know I'm married      and I love him very much! I do honest! .......
but a girl needs some friends too! I can't scrapbook with him, talk about all my 'girly stuff' with out him rolling his eyes or zoning out at some point. But then again he is a guy so who can blame him?
But I have made a friend ( or two!) in the last week and it's very exciting for me. I am such a 'people person' I tend to get depressed with out friends around. I love to scrapbook (totaly nuts for it) and I would rather do it with someone then by myself ( in the words of my wonderful hubby I need a cackle fest) my new cropping buddy is Johanna and I am soooo very thankful for her. We had our first crop together the other night while my wonderful hubby watched the kids - our 2 and her 1- ( thank you thank you thank you thank you Mike!) I found out that we were raised a lot alike on a lot of the same things. I had so much fun hanging out -we hardly got any scrapbooking done we were so busy talking! I can hardly wait to do it again
And then there is Shannon I met her the same time that I met Johanna. Shannon and I haven't gotten to hang out much but the three of us ( Johanna, Shannon, and Me - along with some of our kids) had a great lunch one day after our meet- up.com group had a play date. I am excited to get to know these ladies more and build our friendship up.
I feel like a little kid that just made their first friend on the play ground  * laugh* I have a feeling that this might be the start of a great friendship!

Spring fever...ALREADY????


So here it is the start of winter ( on December 21st) and I already have spring fever! I can hardly wait for those warm days, first buds of green, and waking up to the songs of happy little birdies. I HATE the cold (sooo very thankful we didn't end up transfered to Alaska!) and I don't like the dark coming on so early. I can at times hardly get anything done before the dark over takes everything, it gets bitter cold, and I have to get home or at least get inside the house because of the cold. So here I sit with my spring fever just waiting to go out side with out a heavy jacket, gloves, and beenie all as Needed clothing. I can hardly wait to wear dresses and heels with a light sweater and not feel like an ice cube. Man oh man I can hardly wait until Spring!

My little corner to get away too....

I am a scrapbooker..... and I am overly addicted to it.  I love the feeling that I get when I can see a page I am working on starting to 'come together' and finish in to something I had rolling aound in my head. And it's just about every scrapbookers dream to have a place to call 'their own' -their own little corner to call their scraproom. I have BIG plans for a scraproom when we build a house but for now it's my enclosed back porch. I like how sunny it is in there with the wrap around windows. I have a corner and the kids have a corner- we both have our 'art/craft' things in there. This is the first place that I have been able to have anything like this and for just a couple of tables out there I am pretty proud of it. I love to just sit out there with a cup of warm tea, my scrap supplies all over the place, the kids playing out back the the dogs and just SIT there looking at everything, thinking- I can keep the pages I am working on out in front for as long as I like and it's all okay! No more taking over the kitchen table!
I want things to be light baby blue, purple, black and white for the color theme of things. I think this is the theme that I am going to stick with when I have a bigger scrap room and it is truly a Scraproom and nothing else. I like the way the color combo seems to calm and relax me. This little corner of my home is quicky become my little ' mellow corner' as I tend to get wond up about things pretty easy at times.  I still have to get more storage for the things that I have and I still have unpacking to do, and I am GOING to find a baby blue lamp shade for my lamp ( if it kills me! grrr) but, I thought that I would share with you what I have so far! I can't wait to add more!

Well Christmas has come and gone and we had a great time! The kids ( like ALWAYS) scored very well in the gift dept. of things! It was a nice quite day at home with just Me, Mike, and the kids. I think this is the forst year that has ever happened! It was a little sad knowing that all of our friends and family are so far away, but we are hoping next year some of them will be able to be here with us. So enough gabbing... bring on the pictures!....
