Strawberry Soda Cupcakes
1 (18 ounce) box strawberry cake mix 3 eggs 1/4 cup cooking/vegetable oil (not olive oil) 1/4 cup water 1 cup carbonated lemon-lime beverage (I used one small can of Sierra Mist - 7.5oz) fresh sliced strawberries, sliced Cool Whip Topping, thawed or 1 can of white frosting Preheat oven to 350 degrees. Line 2 cupcake pans (recipe made 24 cupcakes) Mix the five ingredients in a bowl; beat well until smooth (about 3 minutes). The kids will enjoy watching the cake mix fizz when the soda is added! Transfer the batter to a lined cupcake pan Bake for 14-18 minutes, or until cake test done Once cooled frost with either Cool Whip or a can of White frosting.
